Pineapple Buttercream Icing
Pineapple buttercream icing is a perfect pairing for old fashioned coconut cake.
1 cbutter (softened)
1 tVanilla Extract
2 lbconfectioners sugar
1 cpureed pineapple (drained)
- In the bowl of an electric mixer, soften the butter. Add vanilla.
- Add 1/3 of confectioners sugar at a time.
- Add milk and beat until mixture is creamy.
- Blend in the pineapple and rum.
