Description

Pineapple buttercream icing is a perfect pairing for old fashioned coconut cake.

Ingredients

1 c
butter (softened)
1 t
Vanilla Extract
2 lb
confectioners sugar
1⁄2 c
Milk
1 c
pureed pineapple (drained)
2 T
rum

Instructions

  1. In the bowl of an electric mixer, soften the butter. Add vanilla.
  2. Add 1/3 of confectioners sugar at a time.
  3. Add milk and beat until mixture is creamy.
  4. Blend in the pineapple and rum.
